  • 2 pieces Boneless, skinless chicken breasts (about 1 pound)
  • 1 cup All-purpose flour For coating the chicken
  • 2 large Eggs Beaten
  • 1 cup Breadcrumbs Plain or Italian-seasoned
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and black pepper For seasoning
  • 2 cups Marinara sauce Homemade or store-bought
  • 1 cup Cottage cheese Creamy base for the bowl
  • 1 cup Shredded mozzarella cheese For topping
  • to taste Fresh basil or parsley For garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the chicken breasts by patting them dry with paper towels.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs.
  • Coat each chicken breast in flour, then dip in eggs, and finally coat with breadcrumbs.
  • In a skillet, heat oil over medium heat and cook the chicken for 4-5 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish, pour marinara sauce over it, and sprinkle mozzarella cheese on top.
  • Bake for 15-20 minutes until the cheese is bubbly and golden brown.
  • In a serving bowl, spoon in the cottage cheese to create an even layer.
  • Once the chicken is ready, place it on top of the cottage cheese and spoon any remaining marinara sauce over it.
  • Garnish with fresh basil or parsley and serve immediately.

Notes

For variations, consider using turkey, adding vegetables, or trying different cheeses.
