Instructions
1. Heat the vegetable oil in a large skillet over medium-high heat. Brown the beef cubes on all sides for about 5-7 minutes.
2. Remove the browned beef and transfer it to the slow cooker. In the same skillet, add onion, garlic, and ginger. Sauté for 3-4 minutes until translucent.
3. Add curry powder, cumin, coriander, and turmeric. Stir and cook for an additional minute.
4. Pour in diced tomatoes and beef broth, scraping the skillet. Mix and transfer to the slow cooker.
5. Add carrots and bell pepper to the slow cooker. Stir to combine.
6. Pour in coconut milk, season with salt and pepper, and cover the slow cooker.
7. Cook on low for 6-8 hours or high for 4-5 hours.
8. Check seasoning and adjust if necessary. Garnish with cilantro before serving.
