Ingredients
  

Chicken Thighs

  • 4-6 pieces bone-in, skin-on chicken thighs Each thigh should weigh approximately 6-8 ounces.

Olive Oil

  • 2 tablespoons extra virgin olive oil For searing the chicken.

Garlic

  • 4-5 cloves fresh garlic, minced Adds robust flavor.

Onion

  • 1 large yellow onion, sliced Adds sweetness and depth.

Carrots

  • 2 medium carrots, peeled and sliced Provides natural sweetness.

Bell Peppers

  • 1 red bell pepper, sliced Adds color and sweetness.

Dried Thyme

Chicken Broth

  • 1 cup low-sodium chicken broth Used to deglaze the skillet.

Fresh Parsley

  • 1 handful chopped fresh parsley For garnish.

Instructions
 

  • Prepare all ingredients. Thaw chicken thighs if frozen and pat dry.
  • Season chicken thighs with salt and pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat until shimmering.
  • Place chicken thighs skin-side down in the skillet and cook for 5-7 minutes until golden brown.
  • Flip chicken and cook for an additional 5 minutes until nearly cooked through.
  • Remove chicken and set aside while preparing vegetables.
  • Add sliced onions to the skillet and cook for 2-3 minutes until softened.
  • Add minced garlic and sliced carrots, sauté for 3-4 minutes.
  • Add sliced bell peppers and dried thyme, cook for an additional 3 minutes.
  • Pour in chicken broth and scrape the skillet to deglaze.
  • Return chicken to the skillet, spoon broth and vegetables over it.
  • Reduce heat to low, cover, and simmer for 15-20 minutes.
  • Check chicken temperature to ensure it reaches 165°F.
  • Let sit for a few minutes before serving, then garnish with parsley.

Notes

Consider adding seasonal vegetables or a splash of cream for variations.
