Instructions
Prepare all ingredients. Thaw chicken thighs if frozen and pat dry.
Season chicken thighs with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat until shimmering.
Place chicken thighs skin-side down in the skillet and cook for 5-7 minutes until golden brown.
Flip chicken and cook for an additional 5 minutes until nearly cooked through.
Remove chicken and set aside while preparing vegetables.
Add sliced onions to the skillet and cook for 2-3 minutes until softened.
Add minced garlic and sliced carrots, sauté for 3-4 minutes.
Add sliced bell peppers and dried thyme, cook for an additional 3 minutes.
Pour in chicken broth and scrape the skillet to deglaze.
Return chicken to the skillet, spoon broth and vegetables over it.
Reduce heat to low, cover, and simmer for 15-20 minutes.
Check chicken temperature to ensure it reaches 165°F.
Let sit for a few minutes before serving, then garnish with parsley.
